Shelli’s Deviled Eggs

Join me and make some deviled eggs for your family. A great snack or appetizer or party dish any time during the year.
The day before or at least 4 hours before class, students need to hard boil 5-10 eggs. Place eggs in a 2 quart pot and cover with water. Bring to a boil and boil for 12 minutes. Allow to cool. Remove egg shells and place whole eggs into a bowl, cover and chill in refrigerator.

Ingredients for Friday’s class:
Hard boiled eggs with shells removed that have been chilled
Dijon mustard (or mustard of your choice)
Tools: Bowl, Spoon, paring knife, deep plate or platter to place eggs on to serve

Shelli Romero works for the Oregon Department of Transportation and owns her own career coaching business, Rose City Chica, LLC. She earned her undergraduate degree from the University of Oregon and her graduate degree in Public Administraiton from Portland State University. She is a graduate of two leadership programs – one national, one statewide. She enjoys international travel, cooking, reading, hiking, history, political activism and watching documentary movies.
